Avocado toast with fresh summer fruit. Perfection. Take a peek at this quick video from my about.com avocado video vault while peaches and kumquats are still in season. This is such a satisfying breakfast or snack; you’ve got to try it!
Here are the details for the avocado toast with peaches and honey: First, toast your favorite bread. I like Ezekiel bread because it’s filled with sprouted grains and holds-up under the heft of all that avocado goodness.
Then, add 1/2 avocado sliced, 1/2 a peach sliced and a drizzle of honey, about a teaspoon. Finish with two or three mint leaves torn and sprinkled on top.
For the avocado and kumquat toast: On top of your toast add 1/2 an avocado sliced and two kumquats sliced and deseeded.
How simple is that?
